My diet consist of mostly uncooked fruits, vegetables, nuts and seeds (people call it raw vegan), so one of the things I have had learn how to make was bread replacements because I love making sandwiches. Here is a really quick way I learned by slicing eggplant and dehydrating (I suppose you could bake it also). Eggplant is bland so I sprinkled a little jollof seasoning on top (you can use any veggies seasoning blend) and will let them dry for a few hours until we are ready to eat. I will also be making a raw vegan coffee cake for later today, YUM! I will post pics of that later on. peace and stay healthy ya’ll!
